It's my party and I'll eat what I want to: Coffee Cake Pancakes

My birthday is almost a week away.  Last night my husband and I went out to a wine bar for a fabulous dinner to celebrate.  (You've got to take advantage of babysitters as you can get them!)  Some of my family is leaving for out of town soon so we're going to celebrate tonight with a party. Therefore, I am declaring it 'party day'.

Since it's my party and I'll eat what I want to, I went with Coffee Cake Pancakes for breakfast.

Hold your breath folks, but I used NO raw sugar, NO whole wheat flour, and NO flax seed.  Shocking, I know.  These are full-fledged indulgence. I started with making a basic buttermilk pancake batter and went from there. 


Basic Buttermilk Pancakes with Cornmeal

Ingredients: 
2 cups flour
1/2 cup cornmeal
2 teaspoons sugar
2 teaspoons baking powder
1 teaspoon salt
2 1/4 cups buttermilk
2 eggs
4 tablespoons melted butter, cooled

Directions:
Mix the dry ingredients together and stir with a whisk.  Mix the wet ingredients together with a whisk.  Mix together and stir just until flour is incorporated.  DO NOT OVER MIX.


Coffee Cake Crumbles

Ingredients:
1 1/4 cup flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup brown sugar
1/4 teaspoon salt
1/2 cup softened butter
1/2 cup chopped pecans

Directions:

Beat all but pecans on low speed until it resembles wet sand.  Stir in the pecans.  Press the mixture together in your hands to create clumps.  Bake in a pre heated 350 degree F oven for 20-25 minutes.  Break up any large clumps and cool.

Pour pancake batter onto a hot griddle and sprinkle streusel topping into pancake. When pancake begins to bubble and set up on the sides- flip.

Top with more streusel and a powder sugar glaze. (Powder sugar thinned with water.)


Option:
I also tried this recipe one other way.  With out baking the streusel I topped each pancake while on the griddle with a generous sprinkling of the 'raw' streusel.  After I flipped the pancake I topped it with more streusel. It didn't have the "crunch" of the other, but it was still very good.
