Refrigerator Dill Pickles
(makes 1 jar)

1 Kirby cucumber
3/4 cup water
1/2 cup apple cider vinegar
1 1/2 teaspoons sea salt
a few sprigs of fresh dill
2 cloves garlic, peeled and smashed
1 teaspoon peppercorns
Bring the water, vinegar and salt to a boil.
Wash and slice the cucumber.
Fill the jar with the garlic and peppercorns. Add in the dill sprigs and sliced cucumbers. Pour over the vinegar solution up to a 1/4 inch from the top of the jar.
Screw on the lid and allow to cool, then chill for at least 24 hours.
If you love the strong bite of vinegar, these pickles are for you.

You have inspired me to do a "pickle" project with my 6yo because she loves loves them!
ReplyDeleteWe made pickles about 2 months ago when I had cucumbers coming out of my ears. The recipe we used said they had to sit for 2 months so in about 2 days I get to try out my pickles!!! This recipe looks much easier though.... oh well you live you learn.
