In the mean time, here's the directions for you: Makes: 6 servings Ingredients 2 cups cooked brown rice 1/4 cup cheddar cheese, finely grated 5 eggs 1 cup milk 2 cups broccoli, cut into bite sized pieces and blanched 1 cup sharp cheddar cheese, grated 4 green onions, sliced 1 pinch nutmeg (optional) Salt and pepper, to taste Instructions Mix the rice, finely grated cheese and one egg in a bowl. Press the rice mixture into a pie plate, about 1/4 inch thick.
Bake in a preheated 450 degree F oven until the edges and bottom just start turning golden brown, about 5 to 7 minutes.
Mix the remaining eggs, milk, broccoli, sharp cheddar cheese and green onions in a bowl and season with salt and pepper. Pour the egg mixture into the pie crust.
Bake in a preheated 375 degree F oven until golden brown and set in the center, about 30 to 35 minutes.
I think a cake pan would work fine. The slices might not come out as neatly since you won't have the sloping sides that a pie plate have. I'm thinking that even a 8 or 9 inch square glass pan would work fine as well.

This looks really good. You're picture looks alot more appetizing then the picture on the website with the recipe. ;) I've been doing the 17 day diet and have been wanting quiche! can't wait to try it.
Hi Ellie, I don't know much about gluten-free but from my understanding brown rice is gluten-free. However I read that brown rice does contain haemagglutinin lectin which can cause problems for some individuals. Because of this white rice, which has had the bran removed, may actually be a better form of rice. So if you're looking for a gluten-free recipe, I think you'll be safe with this one. But, check all the ingredients to make sure. :) Happy cooking! ~Mama J

Im on a fat free, low carb diet so I made this using egg whites and fat free cheese and was disappointed as it didnt have much flavor. It was missing something, just not sure what. Loved the rice crust though so will definitely eusng that part if the recipe again!
